In the meantime, here is a yummy grilling recipe – try it out for Memorial Day!

Grilled Lemon Chicken Recipe
Lemon Barbecued Chicken – Serves 4-6
• 2 lemons, divided
• 1 cup of extra virgin olive oil, divided
• 2 pounds of boneless, skinless chicken cutlets
• 1 teaspoon onion powder
• 1 teaspoon garlic powder
• 2 Tablespoons freshly ground black pepper
• 8 springs of rosemary, divided
• Salt to taste
1. Zest the rind from one lemon into a gallon size resealable bag. Cut lemon into 4 wedges and squeeze juice into bag. Toss juiced lemon wedges into bag.
2. Measure two tablespoons from the olive oil and set aside. Combine remaining olive oil, chicken, onion powder, garlic powder, pepper, and 4 sprigs of rosemary into the bag with the lemon. Marinate in refrigerator for 45 minutes.
3. In the meantime, preheat the grill. Tip: To season your grill and prevent food from sticking, coat the bottom of a halved onion in canola oil and using tongs, rub the onion along the grill while it’s warm for 1-2 minutes. Discard onion.
4. After chicken is finished marinating, remove chicken from bag and discard the marinade. Place chicken cutlets on grill and cook for 3-4 minutes each side.
5. When chicken is cooked through, remove from grill and place on a serving platter. Slice second lemon and garnish the chicken with lemon slices and remaining four sprigs of rosemary. Drizzle remaining two tablespoons of olive oil over chicken, salt to taste and serve.
